3 tablespoons butter
2 egg yolks
4 egg whites
150 gr. (1 small bowl) old cheddar or cheddar
1 teaspoon salt

How Is It Done?
- Set the oven to 200 degrees.
- Boil the broccoli florets in boiling water until they soften slightly and lose their color.
- After boiling, immediately put it in cold water.

- Melt 2 tablespoons of butter in a deep frying pan and add the broccoli puree.
- Add salt and pepper and fry until it hardens a little.

- Put the egg whites, which are waiting at room temperature, in a deep bowl and beat until they increase in volume by 3 times.
- Combine the beaten egg whites with the broccoli puree without waiting at all and mix the white part with the folding method without extinguishing it with the help of a spatula.
- Grease the souffle pots with the remaining 1 tablespoon of butter and line the inside with grated cheddar cheese.
- Roll out your souffle dough into souffle glasses and bake in the oven for about 10 minutes.
